Coconut Soup Recipes

Turkey Soup
2 quarts vegetable stock
1 Turkey Carcass
1 - 10 ounce box frozen mixed vegetables
1/2 cup rice
2 cups cooked Turkey, cubed
1 tsp seafood seasoning
2 tsp dried thyme
Fresh ground black pepper, to taste

· Combine the vegetable stock & the Turkey Carcass in a large soup pot over low heat & bring to a simmer. Cover & simmer for 1 hour.
· Add the remaining ingredients to the stock. Cover & simmer for an additional 20 mins.
· Remove the bones before serving.
Servings:  6
Contains: 2 tbsp Coconut Oil per serving.

Black Bean Soup
1 pound dried black beans
1/2 tsp pepper
2 cloves garlic, minced
1 medium onion
1 tsp oregano
1 bay leaf

· Cover beans with water, 2” above top of beans. Soak overnight.
· Bring to boil, then add remaining ingredients & simmer 2 hours or until beans are done.
· You can then puree half & add back to the soup. Remove bay leaf before pureeing.

Servings:  6
Contains:  1 tsp Coconut Oil Per serving.

Minestrone Soup
1 clove garlic, minced
2 cups onion, chopped
1 cup celery, chopped
1 small can tomato paste
2 quarts beef broth
1 quart water
1 cup cabbage, shredded
2 whole carrots, sliced
1/4 tsp ground black pepper
1/8 tsp ground sage
1 whole zucchini, sliced
1 package frozen green beans
1 can red kidney beans
1 cup macaroni

· In a large soup pot, sauté garlic, onion & celery until soft.
· Stir in tomato paste, broth, water, cabbage, carrots, salt, pepper & sage. Mix well, bring to a boil.
· Lower heat. Cover & simmer slowly 1 hour.
· Add remaining ingredients. Cook 10—12 mins until macaroni is tender.
· Serve hot.

Servings: 8

Veloute’ of Broccoli Soup

1 cup chopped broccoli, fresh
4 cups chicken stock, fresh
1/4 tsp fresh ground black pepper

· Combine chicken stock & Coconut Cream Concentrate in saucepan & bring to a boil.
· Add broccoli & simmer for 4 to 6 mins. Until broccoli is crisp & tender
· Add seasonings
Servings:  4
